I am in the cooking mood...Freezer cooking...

Last night I made 3 Lasagna's and one Ziti...All meatless! That saves a buck!
We ate one lasagna for dinner...And put the other two and the Ziti in the freezer...which I will be thankful for later. I have learned a few things about lasagna that kept me from making it so often before...trying to get the hot noodles all lined up before they turned hard and gross. Now I simply put them in the pan uncooked and add water to the sauce...about two cups! layer as usual...it will look a little running....after an hour it came out delicious. I don't have the recipe of the year or even know how to make homemade noodles...I have not been that brave yet. I do add italian olive oil based dressing to the sauce and sautéed zucchini and onions and then put them in the food processor (So my son is not aware he is eating veggies) And now I am in big trouble because he saw me writing this post!! And I used fresh mozzerella....all warm and bubbly...yum! I can't wait to have it again. 
I love making freezer meals because I usually have three 
meals for later. Do you have any freezer meal recipes to share??
